Buttermilk Candy Homemade Candy from the Farm Journal Mom

1 c buttermilk
1 tsp baking soda
2 c sugar
2 tbsp light corn syrup
1/4 cup butter or margarine
1 c chopped pecans

Combine buttermilk and baking soda in 3-qt heavy saucepan. Let stand 20 minutes

Add sugar and corn syrup to buttermilk. Bring to a boil, stirring until sugar is dissolved. When mixture boils, add butter and cook, stirring occasionally if necessary, to the soft ball stage. (236 to 238) it will turn a medium brown color.

Remove from heat and cool to lukewarm. (110)

Beat until mixture losses its gloss and starts to thicken. Stir in pecans. Turn into buttered 8" pan. Cool until firm; then cut in 36 pieces. Makes about 1-1/2 pounds.

Chicken Mixture 3 T oil 1 lb ground chicken or turkey 1 c water chestnuts 2/3 c mushrooms 3 T chopped onions 1 tsp minced garlic Special Sauce 1/4 c sugar 1/2 c water 2 T soy sauce 2 T rice wine vinegar (I used other vinegar) 2 T ketchup 1 T lemon juice 1/8 tsp sesame oil 1 T hot mustard 1-2 tsp garlic and red chili paste Stir Fry Sauce 2 T soy sauce 2 T brown sugar 1/2 tsp rice wine vinegar (I used other vinegar) 1 head iceburg lettuce rinsed and quartered There are a bunch of new-fangled instructions for these but basically what you do is: Special sauce:  Stir together all but the hot mustard and garlic/red chili paste and set it aside.  Stir fry sauce:  Mix together all ingredients. Chicken mixture:  Brown the chicken and add all the rest of the ingredients and the stir fry sauce and saute for a couple of minutes.  To serve, put all ingredients on the table and let everyone assemble the wraps for themselves as they do in the restaurant.  If you...

My Mother's Fantastic Rolls

These rolls really are fantastic! and there is NO kneading involved.  1 1/2 cup milk (lukewarm)  2 pkgs dry yeast (2 Tablespoons) 1/4 c warm water 1/3 c butter 1/2 c sugar 2 tsp salt 2 eggs, beaten 5 cups flour I warm the milk in the microwave for about 1 1/2 minutes in the microwave.  Soften yeast in warm water.  Combine milk, sugar, butter and salt.  Add 1 c flour, mix well.  Add yeast and eggs, beat well.  Add remainder of flour and blend well.  Cover and let rise until double.  (You'll have an urge to add more flour, but please don't, the dough will be sticky but will be easier to handle after rising.  After rising, I add just a skiff of flour to the surface of the dough and my hands to handle it better.  Also I find that an excellent place to let the dough rise is in the microwave, keeping the door open, so that the bulb warms up the space a bit)  Shape dough into desired rolls.
