Waldorf Stew

I made this stew even before I lived in Waldorf!!!

3 pounds stew meat
1 med onion, chopped
1 cup chopped celery
2 cups chopped carrots
4 med potatoes, chunked
3 T tapioca
1 can tomato soup
1/2 cup water
1 T sugar
1 T salt
pepper to taste

Put meat in the bottom of a dutch oven or heavy pan.  Layer vegetables on top.  Mix together spices, tapioca, sugar, soup and water.  Pour over vegetables and meat.  Bake at 250 degrees for 5 hours, covered.  Do not remove cover and do not stir.  Serves 10 to 12  YUMMY!
