These rolls really are fantastic! and there is NO kneading involved.
1 1/2 cup milk (lukewarm)
2 pkgs dry yeast (2 Tablespoons)
1/4 c warm water
1/3 c butter
1/2 c sugar
2 tsp salt
2 eggs, beaten
5 cups flour
I warm the milk in the microwave for about 1 1/2 minutes in the microwave. Soften yeast in warm water. Combine milk, sugar, butter and salt. Add 1 c flour, mix well. Add yeast and eggs, beat well. Add remainder of flour and blend well. Cover and let rise until double. (You'll have an urge to add more flour, but please don't, the dough will be sticky but will be easier to handle after rising. After rising, I add just a skiff of flour to the surface of the dough and my hands to handle it better. Also I find that an excellent place to let the dough rise is in the microwave, keeping the door open, so that the bulb warms up the space a bit) Shape dough into desired rolls. (I brush a layer of butter on the dough before shaping them and then brush them again after they are shaped). Let rise until double. Bake at 375 degrees and brush with butter again. This dough also makes great cinnamon rolls.
