Orange/Carrot Cookies Cecilia Young

Cheerful as Kansas sunflowers and kind to the budget--attractive and yummy, too. 1 c. shortening 3/4 c sugar 1 c. mashed cooked carrots 1 egg 1 tsp. vanilla 2 c. sifted flour 2 tsp. baking powder 1/2 tsp. salt Golden Glow Topping  (recipe follows) Cream shortening and sugar until fluffy.  Add carrots, egg and vanilla; mix well. Sift together flour, baking powder and salt; add to carrot mixture; mix well Drop batter by teaspoonfuls about 2" apart unto greased baking sheet. Bake in moderate oven 350 about 20 minutes.  Place cookies on racks to cool.  While warm, spread with Golden Glow Topping.  Makes 5 dozen. Golden Glow Topping: Combine juice of 1/2 orange; grated peel of 1 orange, 1 tblsp. butter or regular margarine and 1 c. sifted confectioners sugar.  Blend until smooth.

President Hinckley's Favorite Texas Fudge Cake - Marjorie Pay Hinckley

1 c butter 4 T cocoa 1 c water 2 c flour 2 c sugar 1/2 tsp salt 2 eggs 1/2 c milk 1/2 tsp soda 1 tsp vanilla 1/2 c butter 4 T cocoa 6 T milk Salt 1 tsp vanilla Combine butter, 4 T cocoa and water together and bring to a boil.  In mixing bowl, have 2 cups flour, 2 cups sugar and 1/2 tsp salt and pour the hot mixture into this mixture, having the beaters going.  To that mixture, add and blend, 2 beaten eggs, 1/2 c milk, 1/2 tsp soda a 1 tsp vanilla.  Bake in 9 x 13 inch pan at 375 degrees for 30 minutes.  While that is baking, prepare icing by combining 1/2 cup butter, 4 T cocoa, 6 T milk, a dash of salt and 1 tsp vanilla.  Bring to a boil.  Then with beaters going, pour hot mixture over 1 pound of powdered sugar and beat until smooth.  Add 1/2 cup chopped nuts (optional).  Pour over the cake when it has been out of the oven 15 minutes or less, but no longer.  Enjoy!

No Bake Peanut Butter Cups

This is a favorite of my family and my piano students! 1/2 pound graham crackers (about a pkg and 1/2) 1/2 pound butter (2 sticks) 1 cup peanut butter 3 1/2 cup powder sugar 2 cups chocolate chips Mix peanut butter, butter, powdered sugar and crackers until smooth and creamy.  Spread in pan.  On very low heat melt chips (I put these in a glass bowl and microwave 1 minute on high) and spread on top of peanut butter mixture.  Cut into pieces before the chocolate sets completely.

Fudgy Cocoa Brownies

1 stick butter 1/3 cup baking cocoa 1 cup sugar 2 eggs 1 tsp vanilla 1/2 cup flour 1/4 tsp salt 1/2 cup nuts (optional) Preheat oven to 350 degrees.  Grease 8 x 8 x 2 inch pan.  In a med saucepan, melt butter over low heat (I do this in the microwave).  Remove melted butter from heat, add cocoa and stir well.  Add sugar; mix well.  Add eggs 1 at a time, beat well.  Stir in vanilla, flour and salt until just blended.  Add nuts, spread in prepared pan.  Bake 25 to 30 minutes.  Brownies will be ooooey gooooey.  Sprinkle with powdered sugar.

My Mother's Fantastic Rolls

These rolls really are fantastic! and there is NO kneading involved.  1 1/2 cup milk (lukewarm)  2 pkgs dry yeast (2 Tablespoons) 1/4 c warm water 1/3 c butter 1/2 c sugar 2 tsp salt 2 eggs, beaten 5 cups flour I warm the milk in the microwave for about 1 1/2 minutes in the microwave.  Soften yeast in warm water.  Combine milk, sugar, butter and salt.  Add 1 c flour, mix well.  Add yeast and eggs, beat well.  Add remainder of flour and blend well.  Cover and let rise until double.  (You'll have an urge to add more flour, but please don't, the dough will be sticky but will be easier to handle after rising.  After rising, I add just a skiff of flour to the surface of the dough and my hands to handle it better.  Also I find that an excellent place to let the dough rise is in the microwave, keeping the door open, so that the bulb warms up the space a bit)  Shape dough into desired rolls. German Pancakes

6 T butter 6 eggs 1 cup milk 1 c flour 1/2 tsp salt Melt 6 T butter in 9 x 13 inch metal cake pan at 350 degrees in oven.  (I use a glass pan and melt it in the microwave).  Mix remaining ingredients and pour in the pan and butter and bake until done in the center.  Cut in squares.  Serve with maple syrup or favorite topping. 

Upside Down Pizza

I change about every recipe I use, to include items I usually have on my shelf.  Instead of making the pizza sauce below (which include the water through the garlic salt), I just use 16 ozs pre-made spaghetti sauce! 1 pound ground beef 1 med onion 1/2 cup water 1 pkg spaghetti sauce mix 2-8 oz cans tomato sauce garlic salt 1/2 tsp oregano 1 can sliced olives 1 can sliced mushrooms 1 cup mozzarella cheese diced onion to taste Brown hamburger and onion, add water and spaghetti sauce mix, tomato sauce.  Sprinkle in garlic salt and 1/2 tsp oregano.  Add olives and mushrooms and pour into a 9 x 13 inch pan.  Sprinkle grated cheese on top of the meat and sauce mixture and pour crust mixture over the top.  Sprinkle Parmesan cheese over crust mixture.  Bake 30 minutes at 375 degrees. Crust: 1 cup mil 1 T oil 2 eggs 1 cup flour 1 tsp salt Mix together.

Chicken in sour cream

8 chicken breasts 1 cup sour cream 2 T lemon juice 1 tsp seasoned salt 1 tsp salt 1 tsp paprika 1/2 cup melted butter 1 cup bread crumbs Skin breasts (I use boneless, skinless).  Marinate overnight in sour cream to which has been added salts and paprika.  (I've never done this!!!) Keep in refrigerator until ready to bake.  when ready to bake, arrange in 9 X 13 inch baking dish.  Sprinkle with crumbs.  Dribble with butter.  Cover and bake 325 degrees for 3 hours.  Uncover last 30 minutes.

Crockpot Chicken

Even though this is called "crock pot" chicken, I use this recipe as a "skillet" chicken dish.  Just cook the chicken in a skillet and follow the direction below: 4 skinned chicken breasts 1/2 cup water 1 pkg zesty Italian salad mix (dry) 1 can cream of chicken soup 1 8 oz pkg cream cheese Place chicken in crockpot.  Sift over chicken dry salad mix.  Add water and cook on low for 4 hours.  When chicken is tender, remove from pot and cut into bite size pieces.  Add cream of chicken soup to liquid in the crockpot and add the cheese stirring to cream together until all ingredients are smooth.  Add chicken and serve over mashed potatoes, rice or noodles.

Taco Soup

A favorite of mine because it is a "can" of this and a "can" of that.  Sooooo easy.  On most days I don't even add the hamburger or onion! 1 pound hamburger 1 med onion 1 package taco seasoning 1 16 oz can cut corn, undrained 1 16 oz can kidney beans, or any other kind of bean, undrained 1 28 oz can stewed tomatoes 1 cup salsa 1 small can chopped green chilies Brown hamburger and onion, add taco seasoning.  Add all other ingredients.  Bring to a simmer.  Serve over taco chips, sprinkle with grated cheese and add a dollop of sour cream.

Waldorf Stew

I made this stew even before I lived in Waldorf!!! 3 pounds stew meat 1 med onion, chopped 1 cup chopped celery 2 cups chopped carrots 4 med potatoes, chunked 3 T tapioca 1 can tomato soup 1/2 cup water 1 T sugar 1 T salt pepper to taste Put meat in the bottom of a dutch oven or heavy pan.  Layer vegetables on top.  Mix together spices, tapioca, sugar, soup and water.  Pour over vegetables and meat.  Bake at 250 degrees for 5 hours, covered.  Do not remove cover and do not stir.  Serves 10 to 12  YUMMY!

Fiesta Taco Casserole

1 pound ground lean beef 1 15 oz can spicy chili beans, undrained 1 cup salsa 2 cups coursely broken tortilla chips 1/2 cup sour cream 4 medium green onions, sliced (1/2 cup) 1 med tomato, chopped (3/4 cup) 1/2 cup shredded Cheddar or Monterey Jack Cheese (4 oz) tortilla chips Heat oven to 350.  Cook beef in skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.  Stir in beans and salsa.  Heat to boiling, stirring occasionally. Place broken tortilla chips in ungreased 2-quart casserole. (I put in 13X9 pan).  Top with beef mixture.  Spread with sour cream.  Sprinkle with onions, tomato and cheese.  Bake uncovered 20 to 30 minutes or until hot and bubbly.

Portobello and Asparagus Egg Strata

1 tablespoon extra Virgin Olive oil 1 1/2 coups chopped yellow onion 1/4 teaspoon dried thyme 3 cloves garlic, finely chopped 1 (8 0z) package Baby Bella mushrrom, thinly sliced 1/2 pound asparagus, trimmed and cut into 1-inch lengths 1 teaspoon salt 8 eggs 1 cup milk 2 tablespoons Dijon mustard 3 tablespoons chopped parsley Black pepper to taste 5 cups (1-inch) cubes sourdough bread 4 ounces herb or plain goat cheese, crumbled. Heat oil in a large skillet over medium heat. Add onions and thyme and cook until softened, about 4 minutes. Add garlic, mushrooms, asparagus and 1/2 teaspoon of salt and cook 5 more minutes longer. Set aside. Meanwhile, whisk together eggs, milk, mustard, parsley, pepper and remaining 1/2 teaspoon salt in a large bowl. Set aside. Spread half of the bread over the bottom of a light greased 9x13-inch baking dish. top with half of the mushroom mixture and a third of the goat cheese. Blue-Raspberry Rhubarb Crisp Annette

Topping 1 cup rolled oats 1/2 cup flour 1/2 cup chopped nuts 1/2 cup brown sugar 1/2 tsp ground cinnamon 1/2 tsp ground ginger 1/8 tsp salt 1/2 (1/4 lb.) cold butter or margarine, cut into chunks Filling 1 cup fresh blueberries, rinsed & drained 12 ounces rhubarb (about 3 stalks) 3/4 cu granulated sugar 2 Tbsp cornstarch 3 cups fresh raspberries, rinsed & drained Mix all dry topping ingredients together. Blend in butter, using pastry blender. Mix until coarse crumbs form. Cover and chill. Rinse rhubarb and trim off and discard green parts of stalks. Cut into 1/2 inch thick slices. You will need about two cups. In a large bowl, combine granulated sugar, cornstarch, blueberries, raspberries and rhubarb. Mix gently. Pour into shallow 2-3 quart baking dish. Sprinkle evenly with topping. Bake 350 degrees about 45 minutes or until topping is golden brown and fruit is bubbling. Serve warm or room temperature. Great with ice cream. Filled Cookies Grandma Emily

1 egg 1 cup sugar 1 cup shortening 1/2 cup milk or cream 1 tsp salt 1 tsp vanilla 2 tsp Baking powder 1 tsp soda 2-1/2 cups flour Frosting: 1/2 cup butter 1 lb confectioner sugar 1 1/2 tsp vanilla 4 T milk Mix all together and bake 350 degrees for about 10 minutes. This is the cookie I make for Valentine and Christmas.
