Sloppy Joes with Chicken Gumbo Soup

Mild and tangy sloppy joe mix. Great for lunch or watching the ball games.
20min/5/min/prep/SERVES 4

1 lb lean ground beef
1/3 cup catsup
1 tablespoon brown sugar
2 teaspoons vinegar
1 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/2 garlic powder
1 can chicken gumbo soup (undiluted)
4 hamburger buns, toasted

1. Crumble beef in 2 quart microwave casserole dish. (I did mine in a skillet on the stove.)
2. Cook on High power (100%) for 3-5 minutes, stirring to break up meat, once or twice.
3. Drain hamburger. Add the remaining ingredients except for buns.
4. Blend well and heat on High power for about 3 minutes, or until very hot and heated through.
5. Spoon meat mixture onto buns and serve.

I wanted to make sloppy joes the other for the Bainter children. I couldn't find my recipe that I had gotten from Lora years ago. I went on the internet and found this recipe. It tasted pretty good.

Rhubarb Cake

1 1/2 c brown sugar 1/2 c shortning 1 egg Beat till fluffy. 2 c flour 1 t soda Sift together. Add 1/2 t salt and 1 c buttermilk, beat. 1 1/2 c finely cut rhubarb 1 t vanilla Stir in. Sprinkle on topping. Bake at 350 degrees for 35 minutes in greased and lightly floured pan. Topping: 1/2 c sugar 1 t cinnimon. Top with whipped topping.

Fudgy Cocoa Brownies

1 stick butter 1/3 cup baking cocoa 1 cup sugar 2 eggs 1 tsp vanilla 1/2 cup flour 1/4 tsp salt 1/2 cup nuts (optional) Preheat oven to 350 degrees.  Grease 8 x 8 x 2 inch pan.  In a med saucepan, melt butter over low heat (I do this in the microwave).  Remove melted butter from heat, add cocoa and stir well.  Add sugar; mix well.  Add eggs 1 at a time, beat well.  Stir in vanilla, flour and salt until just blended.  Add nuts, spread in prepared pan.  Bake 25 to 30 minutes.  Brownies will be ooooey gooooey.  Sprinkle with powdered sugar.

Lettuce Wraps

Chicken Mixture 3 T oil 1 lb ground chicken or turkey 1 c water chestnuts 2/3 c mushrooms 3 T chopped onions 1 tsp minced garlic Special Sauce 1/4 c sugar 1/2 c water 2 T soy sauce 2 T rice wine vinegar (I used other vinegar) 2 T ketchup 1 T lemon juice 1/8 tsp sesame oil 1 T hot mustard 1-2 tsp garlic and red chili paste Stir Fry Sauce 2 T soy sauce 2 T brown sugar 1/2 tsp rice wine vinegar (I used other vinegar) 1 head iceburg lettuce rinsed and quartered There are a bunch of new-fangled instructions for these but basically what you do is: Special sauce:  Stir together all but the hot mustard and garlic/red chili paste and set it aside.  Stir fry sauce:  Mix together all ingredients. Chicken mixture:  Brown the chicken and add all the rest of the ingredients and the stir fry sauce and saute for a couple of minutes.  To serve, put all ingredients on the table and let everyone assemble the wraps for themselves as they do in the restaurant.  If you...
